Preparación

To do this, the olives are first washed, cooked in caustic (alkaline treatment), and immersed in brine (salt water), to conserve themselves thus producing a natural lactic fermentation.

The production area of the PGI Aceituna Manzanilla of Seville and the PGI Aceituna Gordal of Seville covers the entire province of Seville and some municipalities of Huelva. Due to its geographical location, we could say that it is a product linked to the Guadalquivir Valley. These traditional varieties are the reflection of Seville’s history and culture, of local knowledge associated with the management of the environment and the fields, a way of relating to nature, transmitted through generations.

TECHNICAL FUNCTIONS OF THE REGULATORY COUNCIL:

The Regulatory Council guarantees the identification and traceability of olives labeled as PGI Manzanilla Olive of Seville or PGP Gordal Olive of Seville.

In this Register, all those olive plantations planted with the chamomile and / or gordal varieties, located in the geographical area established in the specifications and whose olives have been manually harvested through the “milking” system and are considered suitable to be registered covered by the PGI, provided they comply with the provisions of the Specification.
In the registration of dressing industries, all those industries that transform olives of the Manzanilla and / or Gordal varieties from the olive groves registered in the register of the previous article that are located within the geographical area specified in the specifications can be registered of each PGI
In the Register of bottling-marketing plants, all the plants that are going to pack and market the olives covered by the PGI will be registered.
In the register of shopping centers, all those reception centers for Manzanilla and / or Gordal olives from the olive groves registered in the olive grove register that are located within the geographical area specified in the tender specifications may be registered. each IGP.
